Crispy Fried Carp in Citrus Sauce

This recipe for Crispy Fried Carp in Citrus Sauce is a dish that my family enjoys during the holiday season. It is easy to prepare and the taste is fantastic.

Ingredients: __1 carp, cleaned and scaled __1 cup all-purpose flour __1 teaspoon garlic powder __1 teaspoon paprika __1/2 teaspoon salt __1/4 teaspoon black pepper __canola oil, for frying __1/2 cup freshly squeezed orange juice __1/4 cup freshly squeezed lemon juice __3 tablespoons honey __1 tablespoon Dijon mustard __1 tablespoon Worcestershire sauce __1/4 teaspoon cayenne pepper, or more to taste __2 tablespoons chopped fresh parsley leaves Instructions:

1) In a shallow dish, whisk together the flour, garlic powder, paprika, salt, and pepper. Dredge the carp in the flour mixture until well coated. Shake off any excess.

2) Pour canola oil into a large skillet over medium-high heat. When hot, add the carp and fry until golden brown and cooked through, about 3 minutes per side.

              remove the carp from the skillet and drain on paper towels. Keep warm.  

3) In a small bowl, whisk together the orange juice, lemon juice, honey, Dijon mustard, Worcestershire sauce, cayenne pepper, and parsley. Serve with the fried carp. Enjoy!

Fried Carp Nuggets with Tartar Sauce

There are many delicious ways to prepare carp, and Fried Carp Nuggets with Tartar Sauce is one of our favorites. This dish is perfect for a quick, easy, and economical weeknight meal.

Ingredients:

1 pound carp fillets, cut into nuggets

1 cup all-purpose flour

2 teaspoons salt

1 teaspoon black pepper

1/4 teaspoon cayenne pepper

3/4 cup milk

3 tablespoons olive oil, divided

Tartar sauce (recipe follows)

Instructions:

  1. Preheat oven to 400 degrees F. 2. In a shallow bowl, combine flour, salt, black pepper, and cayenne pepper. In another shallow bowl, whisk together milk and 2 tablespoons of olive oil. Dip carp nuggets in the flour mixture until well coated, then dip in the milk mixture. 3. Place carp nuggets on a greased baking sheet. Bake for 12 minutes or until golden brown. 4. Serve with tartar sauce and remaining olive oil.

Fried Carp Sliders with Remoulade

Ingredients: -1 1/2 lbs. carp fillets, skinned and cut into 1" cubes -1/2 cup all-purpose flour -1/2 teaspoon paprika -1/4 teaspoon cayenne pepper -1/4 teaspoon garlic powder -1/4 teaspoon onion powder -1/4 teaspoon salt -1/4 teaspoon black pepper -2 tablespoons olive oil or vegetable oil, divided -6 slider buns, split and toasted -3 tablespoons mayonnaise -3 tablespoons ketchup -1 tablespoon prepared horseradish -1 tablespoon sweet pickle relish -1 clove garlic, minced Instructions: In a shallow dish, combine flour, paprika, cayenne pepper, garlic powder, onion powder, salt and black pepper. Dredge the carp cubes in the flour mixture until well coated. Heat olive oil in a large skillet over medium heat. Add the carp cubes and cook until golden brown on all sides and cooked through, about 8 minutes. In a small bowl, whisk together mayonnaise, ketchup, horseradish and pickle relish. Serve the fried carp sliders on the slider buns with remoulade sauce.

Instructions: 1. Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet with cooking spray. 2. In a shallow dish, combine bread crumbs, Parmesan cheese, garlic powder, salt and pepper. 3. Dip carp fillets in olive oil or vegetable oil then coat with the bread crumb mixture. 4. Place on the prepared baking sheet. 5. Bake for 20 minutes in the preheated oven, or until carp are golden brown and flakes easily with a fork. Serve with lemon wedges if desired.
